Does searing actually seal in juices?

This is one of the most repeated claims in cooking, and it doesn't hold up -- but the real reason to sear is arguably a better one anyway.

The kitchen answer

No -- a seared crust isn't waterproof, and it doesn't trap moisture inside. Meat loses moisture based on how hot it gets inside and for how long, regardless of whether the outside was seared first. Searing is entirely about flavor.

What's actually happening

A seared crust is porous, cooked protein and browned compounds from the Maillard reaction -- it has no physical mechanism to form a seal against liquid water moving through it. Moisture loss during cooking happens because heat causes muscle proteins to denature and contract, physically squeezing water out of the meat's structure -- a process governed by internal temperature and time, entirely independent of whatever's happening at the surface.

What searing actually does is generate the Maillard reaction's hundreds of flavor and aroma compounds at the surface -- real flavor, just not moisture retention. The confusion likely comes from a seared piece of meat tasting richer and more savory, which reads as "juicier" even when the measurable water content is the same or lower than an unseared piece cooked to the same internal temperature.

What does that mean for your recipe

If moisture retention is the actual goal, the lever that matters is not overshooting the target internal temperature and letting the meat rest afterward (giving redistributed juices time to re-settle through the fibers) -- not which order you sear in. Reverse-searing (cooking low and slow first, searing at the very end) exists specifically because it separates those two concerns cleanly: gentle, even cooking for doneness, then a hot sear purely for crust and flavor.

Same cut, same final temperature, different order:

  1. Cook one piece of meat seared first, then finished to a target internal temperature.
  2. Cook an identical piece to the same internal temperature without searing at all.
  3. Weigh both before and after cooking.

Watch for: both pieces losing a comparable percentage of their weight in moisture, despite one having a seared crust and the other not -- direct evidence that searing order didn't change how much water was lost.
