Why does fudge turn grainy instead of smooth?
Grainy fudge means sugar crystallized when you didn't want it to -- one stray crystal or one stir at the wrong moment can trigger a chain reaction that turns the whole batch gritty.
The kitchen answer
A hot sugar syrup wants to crystallize back into solid sugar. Fudge only stays smooth because that crystallization is being deliberately delayed until the very end, and controlled tightly once it happens. Grainy fudge is that control failing early.
What's actually happening
A hot, supersaturated sugar syrup is unstable -- it's holding more dissolved sugar than it normally could at that temperature, and it wants to crystallize back out. All it needs is a "seed": one existing sugar crystal (stuck to the pan wall, undissolved from the start) or enough physical agitation to nucleate one. Once a single crystal forms, it acts as a template that surrounding sugar molecules attach to, and the effect cascades through the whole pot.
This is exactly the same physical process as controlled crystallization done on purpose -- fondant's fine, deliberately seeded crystal structure. Fudge just needs it to not happen at all until the very end, when you actively want a fine, uniform crystallization as it cools.
What does that mean for your recipe
The usual fixes aren't superstition -- corn syrup or a splash of lemon juice work by chemically interfering with crystallization (via sugar inversion, see Sugar Work), while brushing the pan wall with water, covering the pot briefly, or simply not stirring once it's boiling all work by physically preventing stray crystals from forming or surviving contact with the syrup in the first place.
What can go wrong
- Sugar not fully dissolved before boiling: undissolved grains on the pan bottom become the very first seed crystals.
- Stirring once it's boiling: unnecessary agitation nucleates new crystals in an otherwise stable syrup.
- Crystals on the pan wall above the syrup line: splashed syrup dries and crystallizes there, then can drop back in later and seed the whole batch.
- No inversion agent at all: a plain sucrose syrup with nothing (acid, corn syrup) interfering with crystal formation is inherently more crystallization-prone than one with either.
Try it yourself
Same fudge base, one variable -- an inversion agent:
- Make two small batches of the same fudge base.
- Add a tablespoon of corn syrup to one; leave the other plain.
- Cook both to the same stage, then cool and set both undisturbed and un-stirred while hot.
Watch for: the plain sucrose batch far more likely to set up gritty, especially if a single grain of sugar touched the pan wall above the syrup line -- the corn syrup batch stays smooth even with minor real-world sloppiness.
Go deeper
Sucrose crystallizes into a specific, regular lattice structure. Invert sugar (produced by acid or already present in corn syrup, itself mostly glucose and fructose) doesn't share that shape, so it physically can't slot into a growing sucrose crystal -- it gets in the way, literally, which is why even a modest proportion of invert sugar meaningfully slows crystal growth without stopping fondant-style fudge from eventually setting at all.
